If caffeine is your love language, you’ll be extra peppy to learn of a brand new brick-and-mortar espresso bar for Whyld Coffee Roasters. Promising ‘genuine connection fuelled by bloody good coffee’, expertly extracted brews are just the beginning for this up-and-coming bean slinging crew.

Founded by Rachel-May Follan, an all-round coffee fanatic and barista of some 16 years, Whyld Coffee Roasters has been bounding along on the local coffee scene channelling the strength of a triple espresso since 2021. Bursting with exact type of enthusiasm that only someone with an unfettered supply of the finest beans can possess, owner Rachel-May’s passion for all things coffee and community is palpable.

Dropping their most exciting project to date (in our totally un-biased opinions *sips coffee*) – the made-with-love micro roastery has officially set down roots in Miami with a brand spanking new espresso bar and roasting facility. From humble backyard beginnings roasting 100g batches at a time, these days the tireless Whyld crew powers a handful of cafes and coffee vans across the coast with their roasted onsite selection of imported and locally-grown beans.

Flaunting a soul-soothing shade of forest green as far as the eye can see, Hillcrest Parade’s latest will be supplying the smoothest of brews to get us glowing from Wednesday – Sunday, in addition to a tasty selection of grab-and-go goodies courtesy of Burleigh Baker.

For those that remember Miami’s I Like Ramen days, Whyld’s smooth specialty brews will need no introductions – after a stint dutifully slinging caffeine fixes every weekend out of the pop-up window where Holliday Coffee now resides. During this fateful time Rachel-May ‘fell in love with the community of Miami’.

As someone who’s dedicated her whole working life to slinging lattes and soy caps, Rachel-May had always been keen to delve deeper into her craft and learn the ins-and-outs of where the cup comes from. Talk about living and breathing the bean life! With a little help from some local legends at Burleigh’s Profile Coffee Colab in 2021, Rachel-May embarked on the rollercoaster of learning to roast coffee. And bean’s yer uncle, Whyld was born not long after!

These days, the micro roastery’s small but mighty team consists of Rachel-May and her partner, and who could forget ‘Big Shaz’, the trusty 12kg Probat coffee roaster.

Requiring all hands on deck to pull off the crew has taken great pains to pour good vibes into their brick-and-mortar milestone. Equal parts eclectic and energising, the result is a charming and sun-drenched spot to swing by for your daily fix, with a rag tag assortment of repurposed milk crate and vintage thrones at which marinate with your morning cup of Joe.

If this sounds suspiciously like your new #happyplace, we have an inkling that might just be by design. “It’s real connections and liquid gold that keep our souls happy” Rachel-May muses, which gets a #HardAgree from our haplessly-addicted selves.

“How often do you meet someone at a cafe? Or say ‘let’s go get a coffee?’ It’s the biggest connector we have”, she adds.

A wise person once said that coffee makes the world go ‘round… or was it money that makes the world go ‘round? Either way, money buys coffee so same thing if you ask us. And let us tell you there’s an abundance of incredible coffee beans roasted right here on the Gold Coast.

And what’s not to love about the humble coffee bean? Well, these guys would say nothing, because what else is versatile enough to bring the energy in the morning before turning into the GOAT of cocktails in the evening – can you tell we’re a fan?

So, whether you know your coffee or you just like to think you know your coffee, we’ve found the best coffee roasters in our very own backyard so you can walk in and flex that knowledge like you’ve been studying the humble bean for years.

If you’re the kind of person that needs a brew at home before you even think about being an actual human (same), then here’s your key to take home and brew up the pearls of their labour or sit back and get them to do it for you, here they are for your jitter juice slurping pleasure.

Merlo Coffee Torrefazione
Escape our subtropical climates for just a moment, and pretend you’ve found your way to Italy at Brickworks Ferry Road in Southport. Italian for coffee house, Merlo’s Torrefazione is a haven of all things coffee and features an in-store air roaster, meaning a constant steady flow of the freshest espresso. Chat all things coffee and let their staff teach you about their blends and make you the perfect grind on the spot depending on what method you use at home.

First Fruits Specialty Coffee
Found in both Labrador and Southport, First Fruits believe coffee is an art form. Beans are ethically sourced and of the highest quality, and the team are very knowledgeable on all aspects of coffee. They roast in medium and city roast styles which bring out the oh-so delicious flavours of the bean and offer a smooth, balanced flavour.

Willy’s Beans
One of the newest roasters on the block, there’s a reason we ‘willy’ love what these guys bring to the table… errr, cup. Tucked away in Burleigh Heads, the coffee warehouse opened its doors in July and locals can’t get enough of the specialty coffee that Willy’s Beans have been brewing. Celebrating the art of coffee making, the boutique roastery pays homage to the heritage of the Colombian-grown beans that are expertly roasted onsite. They’ve got a range of blends for any style of coffee you’re looking to brew at home, so let the expert team guide you to your perfect match.

Don’t let its size fool you, Profile Coffee Colab is a hive of activity and if you’re a frequent visitor like us, you’ll know what we’re talking about. Bringing the buzz (and we don’t just mean the coffee) this local roastery is the home of Joy Organic Coffee Roasters and boasts the Gold Coast’s biggest range of specialty coffee! The line-up grows each and every week so if you’re looking for incredible coffee to enjoy at home, look no further. Not only do they have coffee en masse and beans roasted onsite to take home, but there’s also a co-roasting space, coffee training centre and coffee courses in case you’re looking to certify those coffee snob skills.

Kuki Coffee
Kuki by name, Kuki by nature but in the best kind of way – these guys have been fuelling some of your favourite coffee spots so if you’re a Rafiki stan you’ll have tasted the sweet flavours of Kuki Coffee before. Using an air roasting method that brings hot air to circulate and roast the beans, a unique approach that means you’re getting a more consistent roast and flavour profile so you can trust your daily cuppa tastes the same every. Single. Day. Pop into their espresso bar which is right near their roasting warehouse for a brew to go and to ask the team all things coffee – they’re guaranteed to find your perfect match.

Silipo Coffee
The team at Silipo Coffee use the very best green coffee beans from farms around the world. They’ve been in the coffee business for over 20 years, so they know what’s up when it comes to the perfect brew. Where possible, Silipo Coffee sources organic and fair-trade beans, and the end result is some of the tastiest coffee around. Sip in-store or take some beans home for yourself.

Paradox Coffee Roasters
Speaking of people who know all about coffee, Paradox Coffee Roasters are all about the journey. They purchase quality green coffee beans from estate farms and co-operatives where farmers receive a fair wage for their work. The roasting team has over 15 years of experience, and they are committed to producing the highest quality of coffee there is — just ask the locals!

South Coast Coffee Co.
Formerly known as Pomeroys Coffee Roasters, this Isle of Capri based roastery has a strong ethos: Great coffee isn’t created by accident; it is designed to be great from the start. And the proof is tasted in every cup. Multi-awarded with national titles over the last five years, the team take mountains of care when it comes to crafting blends considering what regions beans come from, the altitudes they grow at and what sort of soil they come from. Don’t just take our word for it; visit their café at Capri on Via Roma Shopping Centre and taste it for yourself.

Koko Coffee Roasters
Passionate about roasting coffee and serving it to the people, Koko Coffee Roasters are all about trying new ideas and honing their skills so they can ensure you get the absolute best brews possible. Offering both espresso and filter coffee, drop in for a chat to learn a little more about coffee or grab some beans and equipment to take home and make your own.

With almost a decade under their belt, these guys are one of the Coast’s best-known producers of fine coffee beans. What they do with them is utter magic. If you don’t believe us, try any number of their products, from innovative biodegradable coffee capsules to high-grade instant specialty coffee — these guys are true thinkers outside the box. And if you haven’t had the chance to delve into their deliciousness, change up your local cafe to one of MANY cafes located across the Coast that offer their beans!

Quest Coffee Roasters
Burleigh’s beloved coffee aficionados Quest have been roasting up a storm for many, many years, and their brews’ quality is always exceptional. Their roasts are hand-crafted and organic and create the absolute perfect brew. Beans are as fresh as can be, selectively sourced, and only the best will do. You can pop in for a cuppa at the espresso bar or take some home to work your own magic with them. Quest recently branched out to a brand new cafe in BroadbeachBanksy Bar & Kitchen.

Laughing Pug Coffee Company
If their name doesn’t grab your attention, then maybe their innovative coffee drip bags will. Ideal for the next time you go camping — or are experiencing the hangover from hell — you can have speciality grade coffee with just the flick of your kettle switch. No grinding, no mess, and no fuss! They’re also quite the experts on brewing methods and offer friendly advice on how to brew and which of their blends work best with what. Social Espresso
The Burleigh Heads team have nailed it when it comes to smooth, tasty brews and we’re big fans. Not only can you visit them at their brand new HQ (it’s where you’ll find us most mornings), but you’ll also find their roasts in cafés across the Coast, and you can take them home to pop in your machine. Their perfectly crafted coffee comes with a side of passion and all of the knowledge, and you can rest assured you’ll be handed the perfect cuppa every single time.

Another week, another new coffee haunt. Awww, you shouldn’t have (srsly, you shouldn’t have, our raging caffeine addiction does not need any encouragement). And when it comes to new cafes, our self-control is nowhere to be found. Yes, the first half of that sentence was also entirely unnecessary #whereforeartthouselfcontrol.

And speaking of a total lack of self-control, we love any and every excuse to drop by Nobby’s, so the chance to sample a cute new coffee spot is reason enough for us. and we’ve been peachy-keen to check out newbies The Holliday Coffee ever since we heard whispers of their arrival on the scene.

Owners Marcus Wilkins and Olivia Ayres are two cool beans who know a whole latte about serving up our favourite nectar. Marcus co-owns Nook Espresso in Burleigh Heads, and Olivia has worked in the industry for 10 years. And when a certified GC hospo mastermind like Scott Imlach (behind names like Bine Bar and Dining, Tank Bar and Dining, Hideaway) offers up the opportunity to #sharesies some space backing onto his latest conquest, well, that’s an offer that’s pretty hard to refuse. Adjoining Nobby’s darling newcomer Okawari House, we get a twofer with The Holliday Coffee setting up a hole-in-the-wall coffee house round the corner/out the back – aaand would you look at that, we’re already lost.

Like little ferrets sniffing out our prize, we’ll just follow our noses and that unmistakable aroma wafting down the street from 5.30am daily. Delivering the morning glow in more ways than one, once you spot the trademark cheerful, peachy pops you’ll know you’re in the right spot.

Providing the perfect spot to catch the morning sun only sealed the deal for Marcus and Olivia, and finally, someone who gets the importance of soaking up some morning rays (after we get our coffee, that is #priorities)

Benny Young of Young Built designs helped them bring their small but mighty fit out to life, with a modern palette of white and dark timber finishes to let those warm pops of colour shine. If you’d prefer to linger a little longer, sidle up to one of the street tables under one of those cute af umbrellas that we’re definitely not trying to work out how to smuggle in to our beach bags.

But The Holliday is so much more than just a pretty face, coz they’re also dishing up light bites of happiness on a plate – think casual cafe fare like coffee (obvs), jaffles, croissants and crumpets. Imagine breaking open a crispy, lava-filled Spaghetti and cheese jaffle on a crisp winter’s morning… or perhaps a freshly buttered (macadamia & honeycomb butter – no less!), crumpet drizzled in honey aaand hello? Is anyone still here or are we all officially stampeding The Holliday to get a toast of that action?

We’re very frond of Ferg’s

Ok we can’t herb our enthusiasm here, because Miami’s café caper just got more unbe-leaf-able.

Taking over from The Elegant Shed in Hillcrest Parade, you’ll find a new eats and sips spot all dressed up and ready to grow!

Say aloe(vera) to Ferg’s, and no we’re not referring to Prince Andrew’s ex, but the eclectic garden-shed vibing café serving restaurant quality food.

Paul Carter is the new boss-man in town, aptly choosing the acronym F.e.r.g.s for his delicious breakfast and brunch venue.

So what the heck does Ferg’s stand for you ask and lettuce explain. It means Fresh Eats Really Good Sh*t and #IbegYourGarden?!

Serving up the freshest local produce, the name certainly fits and was simply mint to be.

Choosing the location for its hip and happening factor, multifaceted culture and super friendly local spirit, Paul and the Ferg’s team are bringing good old-fashioned community shed feels to the ‘hood.

When you walk in, there’s not a single too-cool-4-school pouting barista or waitperson in sight.

Everyone is smiling, plus they remember your name and srsly this sort of service gives us the warm and fuzzies every day of the week.

Ferg’s certainly looks the part, with its woody, kinda rustic, mismatched, and entirely charming aesthetic and swagger.

Upon entry, you’re eyes are drawn to the large concrete table in middle of the space, summonsing you to pull up a pew and chew the fat with fellow Ferg’s folk.

Or, plonk yourself on one of the bar stools lining the perimeter, chill on the bench seat (if you’re lucky – it’s prime real estate), or bags one of the few tables and chairs out front under funky mustard and white umbrellas.

Recruiting Head Chef Wendy Ortiz (ex-Overdose Specialty Coffee in Ramsgate Beach, New South Wales) and Aleesha Forno of Miss Moneypenny’s fame to design the menu was an Expert Level Pro move.

The food is honestly five-star restaurant quality and totally ex-seeded all our expectations.

The frontrunner and signature dish is Lemon Meringue Crumpets and the name alone is enough to induce a lip-licking reflex.

Made with Sourdough Co crumpets, house lemon curd, oat crumble and berry gel, it’s beyond be-leaf.

We also feel all the feels for the Smashed Avo Taco because anything involving avocado and tacos is destined to end up in our stomachs.

Served in a blue corn taco, feast on smashed avocado, fetta, watercress, and seeds.

If you or someone in your fold is a staunch meat eater, the Bacon & Egg Roll will hit the spot with greens, hickory smoked bacon, egg, Swiss cheese, and house relish.

Beverage-wise, pair your chow with coffee brewed with Gabriel beans, a cuppa tea, iced drinks, milkshakes, thick shakes, smoothies, and dairy-free smoothies like the Banoffee. With banana, rolled oats, maple syrup, an espresso shot (wakey wakey!), peanut butter, cocoa powder and almond milk, it’s better than the dessert.

The signature sips would have to be the Hrvst St cold pressed juices, and nothing prickles our fancy more on a stinking hot summer’s day.

May we recommend the Ruby Tuesday with watermelon, pink lady apple, pear, rhubarb and lime #TheBee’sKnees.
