Definitely more than one… This place is grand, intimate, moody, and cool AF, and if you’ve been longing for a rule-bending, forward-thinking newbie in its trending-yet-inviting era, #welcome.

Tucked away in a sneaky cul-de-sac, Six-Tricks is more than just a distillery; it’s a sonata of spirits, a dance of distillation, and a carnival of cocktails – served with a twist of Mermaid Beach magic.

Proudly local, the two-million-dollar masterpiece is state-of-the-art in every way. And if that’s not enough, there’s also a second warehouse dedicated solely to aging barrels—because good things take time.

Step inside and you’ll find a spacious indoor bar, a sunset deck for those Instagrammable moments, and a private cask hall that’s more exclusive than Leo’s 49th bday soiree (and bonus, you’re totally invited if you’re a female over 25).

Up to 100 peeps can sip and dance the night away, in a setting rich in atmosphere where you’ll feel like you’re on cloud whisky-nine. Think rich emerald green velvet, luscious leather, exposed brick, moody wood, and don’t even get us started on the custom-built hybrid pot #woahnelly.

Move over multi-national corporations coz the indies are here to pour a new narrative! With a passion for the six core spirits, proud owners Chris Macklin and Teagan Peake spent two years concocting this all-around alcohol alchemy.

But they’re not just making spirits, they’re crafting experiences rich in innovation, eccentricity, thoughtfulness, and a dash of experimentation.

Chris boasts 25 years in the hospitality industry, eight of which include honing his craft in his private distillery #noice. But for this ‘spirited’ gent, distilling isn’t just a job; it’s hereditary. Literally. He’s a direct descendant of Josef Seppelt, the OG of winemaking who founded Seppeltsfield Winery in the Barossa Valley and famously pioneered the industrialisation of the wine-making industry over a century ago.

This was clearly in his DNA and why the bleep don’t we have a sixth-great-grandfather with such a gloat-worthy legacy #frownyface.

Naturally, he and Teagan recruited a head bartender and mixologist of the highest caliber in the form of James. Bringing over 14 years of experience to the table, he’s a far cry from your average drink-slinger; he’s the Harry Houdini of the bar scene.

James has worked across a diverse portfolio of live music venues, high-energy dive bars, restaurants featuring outstanding drink programs, and cozy, specialised cocktail bars, and wine locales.

He’s seen it all, and now he’s here to shake, stir, and sprinkle a little magic over your glass #cheers #cheersagain.

The Six-Tricks team isn’t just aiming for local fame; they’re setting their sights on global disruption. With the Australian spirits scene in revolution-mode, they’re ready to conquer the GC one sip at a time.

Six gin-credible reasons this is one road-sip worth taking

Husk Distillery (image supplied)
Husk Distillery (image supplied)

Okay, by now you’re probably well acquainted with the name Ink Gin, the unmistakable drink as stunning as it is sippable. But did you know the world class drop that’s taken our sips by storm, is distilled 100% locally – as in, a mere 20 minute meander down the road from Cooly?

It should come as little surprise that the masters behind the game changing bevvy that infinitely levelled up our cocktails, have also put together an equally gin-credible experience at their stunning Tumbulgum facility, boasting an immersive cellar door, bar and cafe for our R&R pleasure.

Here are six reasons Husk Farm Distillery is a must visit (hands down best gin going, aside):

Only 20 mins from the GC
Just a hop, skip and a jump over the border, we’re not even sure if a sneaky visit to the lush Husk grounds constitutes a day trip – but it’s certainly one of the more low effort, high reward outings Gold Coasters have at our fingertips. One of those elusive day trips that feels a world away, but with the kind of convenient proximity that barely gives us enough time to dust off the road-trippin’ playlist (or the boredom to set in… #arewethereyet)

Sample the good stuff (+ take home some for later)
It goes without saying one of the biggest perks of visiting the source of such deliciousness is the chance to sample, discover new faves and of course stock up on some souvenirs to replenish our personal bar stocks. Quite frankly, we’re as giddy as a kid in a candy store at the thought.

Our recommendation? Take your tastebuds on a very smooth sip around the signature Husk offerings with a tasting paddle to start. Opt to sample the sipping quality, farm to bottle cane juice Rums, or, if you’re yet to venture beyond the voddy, lime soda train, get your hands on the Ink Gin selection and prepare for your mind to be blown.

Alternatively, just jump straight into the cocktail menu for the best of Husk showcased for your sipping pleasure. Either way, you won’t be disappointed.

Go behind the scenes with Distillery Tours
There’s a lot more to a bottle of this tasty drop than its good looks would let on. Daily distillery tours give the chance to go behind the scenes and see the magic (hard work) that goes into their range of premium spirits.

A first hand look at the unique process involved with Husk’s farm to bottle rare rums offers a fascinating (and tasty) experience like none other.

It’s sure to give you a whole new appreciation for your faves (not to mention, an extra chance to sample the goods).

Fantastic food
Not only have they mastered treats of the thirst quenching variety, the Husk Farm kitchen offers up a selection of top notch eats to rival their signature spirits selection. As you’d expect, the menu has been designed to complement the sips, with a mouth watering array of share-style bites such as Grazing Boards and Ploughman’s Platters. Though, if it’s a full blown feast you’re in the mood for, the Husk kitchen is up to the task (Slow cooked lamb shoulder, Bam Bam rum jus, garden rosemary, need we say more)

Stunning surrounds
Framed by the spectacular Wollumbin (Mount Warning) rolling hills as backdrop and nestled among the sugar cane fields, the architecturally designed modern industrial Husk facilities are every bit as gorg as their surrounds. The lush Messenger family farmland Husk calls home is Northern Rivers scenery at its finest – if the GC wasn’t also a certified stunner, we’d be insanely jealous, tbh.

The expansive lawn offers sun-soaked alfresco vibes just begging for you to perch up for a lazy long lunch, with tables and large umbrellas at which to settle in for the arvo. There’s plenty of space to run around for those with kiddos in tow (and for parents, the ever elusive chance to #sit-ervise). Glorious.

They know how to host a party
Now that the weather is getting warmer it’s time to start thinking about Christmas parties (side note: I’m sure last time I looked this year had only just begun). Why not try something a little different and head to Husk? I mean, last year’s Christmas party may have been great, but did it have sugarcane javelin? On top of delicious food and cocktails for up to 200 people Husk offers a range of fun activities and tastings. Lock it in Eddy.

7 of the best Gold Coast* distilleries

Granddad Jacks (Image: © 2020 Inside Gold Coast)
Granddad Jack's (Image: © 2020 Inside Gold Coast)

As a bunch of discernible consumers of all alcoholic beverages, it was only a matter of time before the Gold Coast began to take heed and give us craft distilleries. Gin has, and still is, having a moment. Whisky has always grabbed a particular pocket of drinkers, and vodka is a staple that, although refreshing on its own, is an excellent base for many delicious cocktails we’ve come to love on the regular (espresso martini, anyone?).

Being one of Australia’s most innovative business start-up areas and having proximity to quality produce and botanicals from the South-East corner of Queensland and the Northern Rivers, our distilleries were always going to be a success no matter what shape or format they came in.

As there’s a sizeable collection for you to consider either buying from or visiting, we run down the distilleries we deem must-visits and precisely what they offer.

Granddad Jack’s
This multi-award-winning backstreet distillery has seen explosive success since opening its doors just three years ago. Aptly positioned in the now growing creative hub of Lemana Lane and surrounding streets, it’s a guaranteed good going-out spot. The portfolio of spirits is diverse, the atmosphere always on point, and the smiles forever beaming.

Wildflower Gin Distilling
As if we need another motive to love the Burleigh Heads/Varisty Lakes area…. Wildflower Gin Distilling is just another reason we’ll add to an already long list. Gins are the main attraction, but the team also turn their hands to vodka, with their recent Lamington Cake vodka a must-try for something sweet and traditionally Aussie!
Offering: group table bookings — 2hr gin masterclasses where you can create your own spirit!

Panezski Artisan Distillery
For a long time, vodka has had strong associations with our hardy northern hemisphere friends, the Russians. However, take a closer look at where some of the best vodkas are being produced, and you’ll notice such countries as the USA, France and Poland continually pop up — we may even see Australia soon in that mix. This family-owned distillery in Southport takes their Polish heritage seriously, dishing up some fine examples of vodka and gin with fantastic attention taken from the start, right through to bottling.
Offering: tasting room bookings — group events
Hours: Mon-Thurs: open from 4pm | Fri open from 2pm | Sat open from 10am, bookings highly recommended. Sunday (bookings only)

Beenleigh Rum Distillery
With the title of being Australia’s oldest operating distillery, you’re not only tasting rum here but a slice of history. This quality artisan producer is a must-try for those who enjoy their rums, with a sizeable collection of products and an ever-growing line for you to appreciate — and keep on appreciating! Parts of the distillery known as the Big Red Shed have been part of the setup from day one back in 1884 and are mixed with a modern venue space for all to enjoy.

Husk Distillery
Ok, so we cheated on this one (not technically a Gold Coast distillery, but we love it so much). Pretty hues of pink and purple have made Husk’s Ink gin one of the most recognisable sips in the past few years. Often punctuated with a sprig of rosemary, you’ll find yourself in a little slice of Northern NSW heaven at their picturesque distillery in the removed countryside spot of Tumbulgum. Although across the border, pack the car with blankets and friends and make an afternoon of it. Read all about the foundation of Husk from Paul Messenger’s interview with us here.
Offering: monthly distillery dinners — table bookings —distillery tours — cocktail masterclasses
Hours: Weds-Fri: 11am – 5pm  | Sat & Sun: 11am – 6pm
Where: 1152 Dulguigan Rd, North Tumbulgum NSW

Capricorn Distilling Co.
Introducing the newest kid on the block! This small-batch distillery has just opened in Burleigh and boasts premium spirits that promise to be ‘as real as it gets.’ Our northern friends may be familiar with Rockhamption’s Saleyards Distillery and now we are fortunate to have the same innovative team bringing their passion to the Goldy. You can expect Spiced Rum, Summer Gin and even Pineapple Rum (for those who love the fruit – even on their pizzas.) Worthy of a leisurely stroll in on the weekend we think!
Offering: distillery tours — distillery door

10 reasons locals love Mermaid Beach

Mermaid Beach T-Shirts The Undercurrent
Mermaid Beach (Image: © 2021 The Undercurrent)

It’s the destination we all know and love. Relaxed, a little bit retro and constantly surprising us with new places to eat and play. It’s the much-loved suburb that flies under the radar when visitors come to town but to locals, it’s pure magic.

To show our love for this beachside beauty, here are ten things we locals love about Mermaid Beach.

The North Room
Recent receivers of a very prestigious hat, The North Room is an intimate restaurant serving up some absolutely stunning contemporary dishes that you’ll want to wrap your mouth around ASAP. Bookings are essential and they open for lunch Friday and Saturday and dinner Thursday to Saturday so you’ll want to get in quick. Huge fans of this place.
Where: 1/2527 Gold Coast Hwy, Mermaid Beach

Little Mermaid
There’s a lot to be said about infusing a space with tropical, feel-good vibes and Little Mermaid, on the highway, has done exactly that. Decked out with plenty of greenery, a laidback beachy feel, and tons of space for all your friends this is the place to be. The bar and restaurant is open for breakfast, lunch, and dinner, which more often than not, is overflowing with folks having the time of their lives as the sun goes down. Little Mermaid has earned the love of locals for their tasty eats, creative cocktails, and generally cool aesthetic – so get there now.
Where: 2557 Gold Coast Hwy, Mermaid Beach

The Borrowed Nursery
Never before has a plant nursery gained such a cult-like following so quickly (or perhaps ever). The Borrowed Nursery draws plant lovers and photographers in droves due to its Instagram-worthy aesthetics and bespoke greenery. While you can certainly purchase the potted petals for your humble abode, you may also like to hire them for an event (which is quite the concept if you ask us). The stunning space also hosts workshops and yoga classes amongst the leafy greens but if that’s not your jam at least pop in for some healthy retail therapy and an Insta-snap.
Where: 42-44 Cronulla Ave, Mermaid Beach

Lupo
Italian food is one of life’s greatest pleasures and particularly when it comes from Mermaid’s Lupo. Tucked away in the little complex that’s also home to Bonita Bonita, Lupo’s menu is one you’ll never forget. It’s a quiet, laidback space, low-lit & moody, and did we mention one of the very best spots for drinking incredible cocktails and filling your belly with goodness.
Where: 2460 Gold Coast Hwy, Mermaid Beach

Zeppelin Barbers
This is one for the fellas… Zeppelin Barbers is the best on the Coast if the man in your life is looking for a fresh cut. Jase and the team are absolute weapons with the scissors and they deliver quality chat and a frosty beer while they’re at it. Good vibes always.
Where: 2460 Gold Coast Hwy, Mermaid Beach

Mermaid Beach Surf Club
How good are surf clubs? Mermaid’s is right on the ocean with uninterrupted views, delicious meals that will fill you right up, and of course, a sweet selection of drinks to sip on. It’s an amazing spot to watch the sun go down with the crew and always provides a quality atmosphere with a buzz of people.
Where: 172 Hedges Ave, Mermaid Beach

Soak Bathhouse
It only opened recently but already Soak Bathhouse has become a firm favourite amongst those who are a little bit partial to some rest and relaxation in a beautiful environment (so everyone). It’s a stunning oasis featuring a magnesium pool, massage rooms, a sauna, spas, and a cold plunge pool. Plus you can get an LED facial and just generally kick your feet up and chill – tried and tested by us and we highly recommend it.
Where: 2532 Gold Coast Hwy, Mermaid Beach

Soak Bathhouse

The Glenelg Public House
Serving up premium steak and boutique wine (among other delicious things), The Glenelg Public House is an absolute must-visit in Mermaid Beach and just generally on the Gold Coast. If for some reason you’re not into steak, everything on the menu is top-notch and they have a selection of some of the best sides we’ve ever sampled. There are also small plate options and it’s all mind-blowing. We vouch for the gnocchi. Just. Trust. Us.
Where: 2460 Gold Coast Hwy, Mermaid Beach

Bonita Bonita
Mexican eats at their absolute finest can be found at Bonita Bonita. Taco Thursdays are a favourite amongst the locals and there are plenty of vegetarian and vegan options should that be your thing. Right next door is Bon Bon Bar so you should also head in there for bulk margaritas before sampling all of the epic eats on offer.
Where: 2460 Gold Coast Hwy, Mermaid Beach

Mermaid Beach Bowls Club
Barefoot bowls is never not a fun time and so, there’s plenty of fun to be had at Mermaid Beach Bowls Club. Round up the crew on a Sunday afternoon for bulk beers and a little ball throwing (bowling) and then venture onto one of the many eateries (like those listed above) to round out the night.
Where: 2418 Gold Coast Hwy, Mermaid Beach

Surely we have convinced you that Mermaid Beach is the place to be by now?
