Citrique has partnered with truffle specialist and founder of Lady Truffle Fine Foods, Debs Oliver to showcase black truffles from Australia’s truffle capital, Manjimup, Western Australia in a new six-course degustation menu.
The menu highlights the diverse and unexpected ways the delicacy can be experienced in an exquisite culinary journey curated by Paul Smart, Executive Chef. Savour the aroma of fresh truffles across duck pate with truffle brioche, seared sea scallops with truffle orzo, Glacier 51 Toothfish with truffle cream sauce, lamb cutlets with truffle mousse, Wagyu beef with truffle rosti, finishing with hazelnut financier, macaé truffle crémeux and truffle ice cream.
