A first for Perfume Playground, the ongoing high tea menu at Chapter & Verse launching from 1st July will incorporate edible essences – so diners can expect to experience notes of fresh ginger, tarragon, grapefruit, rosemary, lavender, ginger, lemongrass, and star anise as they embark on their tasting journey.
Highlight dishes include scallop with native lime finger dressing, salmon pearls asparagus tips with star anise infused honey; and turkey breast with brie cheese, apple compote, savoury eclair and cinnamon. When enjoying the Byron Bay mozzarella with tomato, fresh JW Garden basil, and Josephs Runs olive oil guests themselves will be able to spray on edible basil spritzer for an added layer of depth to the dish – both in taste and in scent as the aroma fills the air reminiscent of applying a herbal perfume. Likewise with the salmon and caviar brioche with dill cream cheese guests will be able to infuse it with a bergamot spray for added dimension.
Even sweet treats like the Cardamom Earl Grey delice; rosemary, apricot and meringue flan; and JW lavender honey scone with candied ginger, house made preserve and fresh cream will feature the flavours of the herbs grown on-site at the JW Garden through the food grade aromas presented with Perfume Playground.

We’ve become known as a hotspot for high tea among locals, and this new menu pushes the boundaries of what guests have come to expect of a traditional high tea, allowing our culinary team to experiment with new techniques and experiences that will give our guests a fresh experience each time they visit”, said Executive Chef Paul Smart.
The Perfume Playground High Tea Menu will replace the High Tea by JW Menu from July 1st and will be available until 30th September 2024.
