Elsa’s Wholesome Life

Processed with VSCO with c7 preset

Ellie Bullen is the foodie mastermind behind Elsa’s Wholesome Life, an insanely popular Instagram page and website showcasing her passion for a plant-based lifestyle and the beautiful recipes she creates.

Ellie, who studied at University on the Gold Coast, will be appearing at Robina Town Centre’s Elixaba, this week for a cooking demonstration as part of her newly acquired role as The Kitchens first ambassador.

We chat with Ellie about her take on the Coast’s foodie scene and all things green.

What do you love about the Gold Coast’s foodie scene?

There are so many healthy and fresh places to eat now! Not only are there plenty of plant based cafes but also options for vegans everywhere! I think the foodie scene is also really getting on board with latest trends and making dishes that are so visually appealing.

How has it changed since you last visited?

I’m lucky enough to have travelled to some incredible places around the world, but the more I travel, the more I realise how good we have it here on the Gold Coast! There is such a talented pool of local chefs and restauranteurs who are continuing to innovate and raise the bar when it comes to creating amazing food concepts, and we are so spoiled for choice now when it comes to accessing wholesome foods and dishes.

Why did you decide to become an ambassador for The Kitchens?

I think it just aligns so well with my beliefs and it was a natural fit! The Kitchens is all about celebrating good food, and there’s also heaps of plant based food outlets and options, which is so unique for a shopping centre. Plus, the Gold Coast will always be home to me so I’m really excited to align with a brand that is in my own backyard.

Tell us about your journey to becoming an Instagram foodie…

I began by sharing iPhone snaps of the food I was making at home while studying at University. I was completing a Bachelor degree in Nutrition and Dietetics and wanted to share parts of what I was learning as well as using my foodie creations as a creative outlet between all the scientific subjects I was doing. It kind of just exploded as my imagery improved, and now it’s turned into a career. I’m so thrilled that I can use this platform to share my lifestyle and help inspire people to make healthier lifestyle choices and call this my job!

Malt House

Robina’s favourite food playground is stepping up its game with the addition of a gastro pub in the coming weeks.

The restaurant slash bar has been taking shape over the past few months and will bring a brand new dining concept to the popular precinct, which takes its cues from Europe (YUM).

Malt House has been named a gastro (short for gastronomy) pub due to its exceptional quality of food served in a casual pub–style setting (which may just be the greatest combination ever). Gastro is a term commonly used in the UK to describe a a pub with an upmarket food offering going beyond your simple bangers and mash.

As you might imagine, The Kitchens newbie will of course still specialise in all things beer with an impressive selection of both tap and bottled beer sourced locally and from afar.

The menu however will feature all your favourites but with a fancy twist from slow cooked lamb shank pie, to panko and Parmesan crusted pork schnitzel… even the traditional Sunday Roast is set to give your mum a run for her money.

It’s the perfect addition to the foodie haven, which already boasts over 30 fresh food retailers, cafes, restaurants and bars.

So, if you’re keen for an after work beverage (who isn’t) and maybe side of dinner, Malt House is your new best friend.

How good is the Gold Coast’s food scene these days. What a time to be alive.

Stay tuned for the exact opening date, you know we’ve got you covered.

New: Nude Sisters Whole Food Kitchen

The local raw food revolution ramped up over the weekend with the unveiling of Nude Sisters Whole Food Kitchen in Mermaid Waters.

The picture-perfect space is decked out in crisp white with blush accents and plenty of greenery. A hand-scrawled slogan adorns the wall reading “life is short, eat the cake”.

And eat the cake you will once you lay eyes on the stunning creations owners Bec Askey and Georgia Homer are dishing up.

The two are best friends who met at Griffith University and bonded over a love of cooking healthy desserts, the demand for which quickly grew amongst family and friends.

The Nude Sisters dream began once the girls started wholesaling their treats to local cafes then selling at NightQuarter and finally, opening the café to share their passion for wholefoods with the masses.

The all-day breakfast and lunch menus are made up of vegetarian dishes using only fresh ingredients and of course, some of the most beautiful raw desserts you’ve ever laid eyes on (all of which are dairy-free, gluten-free, vegan and refined sugar free).

For breakfast, the Green Brekky Bowl is a winner made up of tossed spinach, kale, broccolini, roasted almonds, avocado, quinoa, lemon, olive oil and a poached egg.

If something sweet is more your style the Fruit Toast comes highly recommended. It’s topped with almond butter, banana, honey, cinnamon and a sprinkle of house made coconut and maple granola.

Stay on for lunch (because you can eat as much healthy food as you like, right) and opt for the San Choy Bao with minced mushrooms, zucchini, celery, carrot, spring onion, coriander and crushed peanuts in lettuce cups.

Pay attention, raw food just got really good.

LOCATION: 3/90 Markeri St, Mermaid Waters
HOURS: Monday to Friday 6.30am to 4pm, Saturday and Sunday 7am to 3pm
