A shot of sunshine

Get ready to raise your glass because the sunny vibes are about to get even brighter with the arrival of Sunny Days Distillery in Burleigh Heads. This isn’t just any distillery—this is Australia’s premier vodka house, born and bred on the sun-drenched shores of the Goldie, and it’s here to change the way you think about vodka.

Cocktails and food at Sunny Days Distillery, Burleigh Heads (Image: © 2024 Inside Gold Coast)

It all started with a humble 20L home-style still and a handed-down recipe from founder Sean Tuite’s late grandfather during those lockdown days we’d all rather forget. Sean, who was working as a lawyer at the time, put the COVID lockdowns to good use, refining his vodka recipe. Realising he was onto something special, Sean teamed up with mates Dan Carruthers and former NRL legend Chris Walker, and together they started Sunny Days Distillery.

Fast forward two and a half years, and what began as a small passion project has exploded into a national sensation. With brands like Ariane, a top-shelf premium Australian vodka, the playful Pink Dot, and the flagship Sunny Days line-up, this distillery is now synonymous with Australia’s laid-back, beach-loving lifestyle. Sunny Days RTDs (Ready to Drink cans) have even made their way across the South Pacific, bringing a little bit of Burleigh to places like Fiji, the Solomon Islands, and beyond.

And now, with $10 million in retail sales under their belt, the Sunny Days crew is ready to take things to the next level. Their new 1100-sqm HQ on Hutchinson Street is set to become a must-visit destination.

Think a full taproom and tasting room where you can sample exclusive flavors before they hit the shelves, sip on vodka-based cocktails like the super smooth Ariane Lychee and Lime or Limoncello, and soak up the best of Burleigh’s beachy vibes.

The taproom features 16 taps with not only their latest vodka creations but also local Gold Coast beers. Add to that a rotating roster of delicious eats provided by Fix On 66. Food Truck enthusiasts will be familiar with the American and Mexican street food favourites that owner Britney Neill brought from LA straight to our hearts (and bellies). Think mouthwatering Baja Prawn Burrito Bowls, Buffalo Ranch Tatertots with homemade ranch and, for the vegos, South West Fry Rolls. Taco ’bout a feast!

But the fun doesn’t stop there. Sunny Days Distillery has big plans for live bands, DJs, food trucks, and laid-back Sunday sessions that’ll make you want to linger just a little bit longer. The taproom is as much a community hub as it is a distillery, a place where friends, family, and workmates can come together to celebrate the good things in life—because, after all, every day should be a Sunny Day.

With its roots firmly planted in Burleigh Heads and a vision to become a household name across Australia, Sunny Days Distillery is a testament to what can happen when passion, creativity, and a love for the finer things in life come together. So pull up a chair, grab a drink, and let Sunny Days Distillery take you to the bright side. Cin cin!

Brr, it’s cold in here, must be some IceBar in the atmosphere

The bar at IceBar Surfers Paradise (Image: © 2024 Inside Gold Coast)

Bit chilly, innit? – said absolutely no Gold Coaster in February, ever. That is, until the ‘brrrrand’ new and incredibly cool experience, IceBar Surfers swanned into town – an immersive, winter wonderland themed bar made entirely of ice!

Cocktails at IceBar Surfers Paradise (Image: © 2024 Inside Gold Coast)
Cocktails at IceBar Surfers Paradise (Image: © 2024 Inside Gold Coast)

Serving ice-cold sips and sub-zero ambience, year-round – the Gold Coast’s new glacial-inspired watering hole is quite literally set to become one of the coolest destinations this far south of the equator. Constructed with a whopping 44 tonnes of ice, the bar has forgone the furniture entirely, inviting you to rug up and chillax amongst the array of frosty, hand-carved fixtures – from the bar right down to the chairs…. A butt-clench-inducing concept indeed, if it weren’t for the toasty winter garb they kindly also include #PraiseBe.

IceBar Surfers Paradise (Image: © 2024 Inside Gold Coast)
Coats and Uggs at IceBar Surfers Paradise (Image: © 2024 Inside Gold Coast)

Rivalling the higher end of Antarctica’s averages, the bar’s rather brisk -10°C ambient temps often offer an ‘ice’-watering 45 degree difference between the inside and out. Punters can choose to instantaneously cool off with their choice of shot (which come served in actual ice glasses) chilled cocktails, or mocktails… which brings a whole new meaning to drinks served ‘on ice’.

Though the interactive IceBar encounter isn’t strictly an adults-only expedition. Accompanied mini me’s are also welcome to tag along for their share of icy shenanigans, with a selection of frosty-themed fun and games – such as an air arctic hockey table – for the young and young at heart to try their hand at.

Only the second of its kind in Aus, the Surfer’s iteration is a sequel to Melbourne’s OG IceBar experience, which has been putting the the ‘nip’ in nippy for some 17 years now. Like all the best ideas, the inspiration to expand the igloo-vibing concept from down south came to the owners over a couple’a cold ones. As fate would have it, the owners saw the light spied the ‘for lease’ sign, after venturing by Surfers to wet their whistles (obviously) whilst in town for a tourism conference.

Cocktails at IceBar Surfers Paradise (Image: © 2024 Inside Gold Coast)
Cocktails at IceBar Surfers Paradise (Image: © 2024 Inside Gold Coast)

For this crew of ‘chill’ seeking entrepreneurs (that officially trade under the warm-and-fuzzy moniker of Three Polar Bears & A Penguin, might we add) the location proved too enticing an opportunity to expand their icecapades – just footsteps from the tram stop and surrounded by fellow recreation stalwarts in Surfer’s heaving heart.

And just quietly – while we will always have a soft spot for the incredible array of attractions this grand city of ours is known for – when a new contender appears combining a novel experience for all ages with one of our favourite pastimes – sipping cocktails, it’s guaranteed to earn itself anything but a frosty reception.

Cocktails at IceBar Surfers Paradise (Image: © 2024 Inside Gold Coast)

The unforgettable sip session lasts for 45 minutes, which begins by donning the provided arctic gear, before stepping inside to be greeted by the glacial conditions. Surrounded by 130kg slabs of wall-to-wall ice, soak in the enchanting, surf-themed ice sculptures, which took the expert carving crew almost two (frostbite-inducing, no doubt) weeks to complete.

Colour us impressed, but it’s time we addressed the woolly mammoth in the room – the sips! The drinks menu is split into a compact selection of classic and winter-themed signature cocktails – such as the espresso-infused Snowstorm and the delightful Northern Lights made with gin, peach schnapps and pea flower. Which we will happily throw down like ‘snow’ body’s business.

Surfer’s newest must-do is open 11–11 daily, meaning we can now swing by and blast-chill ourselves with the most refreshing margs in town and a few face-numbing rounds of Connect Four anytime the hankering/urge to escape the humidity hits. Which, basically sounds like paradise anytime from about October onwards, no?

Head here for a sneaky little discount code.

The 2023 Annual Bar & Distillery Round Up

Six-Tricks Distilling Co., Mermaid Beach (image supplied)
Six-Tricks Distilling Co., Mermaid Beach (image supplied)

There’s never not something epic brewing on the GC, and an ever-growing proliferation of stellar bars and distilleries is certainly no exception. Whether you’re partial to sampling amber ales, small batch gins or wine by the carafe (or glass… or bottle…) the mere thought of attempting to work our way through the bountiful selection of brand spanking new sipperies we gained in 2023 is alone enough to get the head spinning.

As is custom, we’ve done the leg work tracking down the most froth-worthy watering holes we’ve welcomed to the fold in the last year. While it’s by no means definitive (cripes, can you imagine the dehydration if we tried) – consider it your handy cheat sheet to keep apprised with the newest players keeping us plied with the good stuff.

Marilyn’s
Marilyn’s Diner & Bar, a ’70s-inspired gem curated by Alex Marks, Rupert Critchley, Brad Morgan, and Johnny Rogers – brings sophisticated sips, American-style burgers, and a boatload of swagger to Broadbeach in the form of an intimate, 50 pax watering hole. The nostalgic, pastel fit-out is backed by eclectic tunes and crafted cocktails served in funky retro glassware. It’s the go-to spot for chic vibes and refined flavours in Broadbeach.

Happy Endings
Spearheaded by Bella & Euan Lovell, Happy Endings emerges in Broadbeach as late-night sip spot taking inspiration from the success of neighbouring big sib, Fig + Frankie’s. The duo’s second, Asian-style bar, exudes Tokyo cool with an intimate, moody vibe – with Japanese inspiration also evident in the architectural selections and menu. Curated by experienced hands from renowned kitchens such as Moo Moo’s, Paddock and Elk – delectable dishes like Lotus Root with nori sesame mayo and Yakitori are served alongside inventive cocktails. The Tokyo Drift, made with wasabi-infused mezcal, melon liqueur + pineapple oleo, is a definite must-try.

The Yard
A collaboration between brewers Brett McCallum and John Green, The Yard made its grand entrance as a beer garden go-to for the Southern GC, reviving the beloved former site of Alfred’s beach shack. True to the casual, café-meets-brewpub atmosphere, the short but sweet menu delivers classic, comfort foods best enjoyed alongside a frosty beer – such as pizzas, pulled pork burgers and ribs. Packed with local surf culture nods, funky murals, and plenty of charm – it’s the perfect spot to kick back under a brolly and sink a few frothies in the sun.

Still & Barrel is a new player amid Tweed’s nightlife scene – a speakeasy-style bar nestled in the heart of Twin Towns. Channelling all the drama of a bond film, the moody, modern interior is home to a hefty collection of rare spirits and top shelf single malts to win the affections of whisky aficionados. Tropic Vice
Replacing Split and Fat Pig site in 2021, owner Jimmy Tantsis-Hall‘s original iteration of Tropic Vice first burst onto the Nobby Beach scene packed with Miami-meets-Palm-Springs vibes and a knockout, open-air rooftop vantage – one which unfortunately left it at the mercy of the elements. The reimagined Tropic Vice 2.0 brings all that, and then some – including a slightly more refined look and a much more practical, all-weather pavilion. Summery cocktails are served alongside light bites such as sliders, ceviche, tacos and bug rolls – a sizzling hot little sip spot indeed.

Cabanas, picnic tables and beach brolly’s are plentiful on the sprawling sundecks – the perfect spot to perch up with a crafted cocktail and laid-back bites such as Wings, Halloumi fries or perhaps share in a luxe Seafood platter. Walk-ins Welcome
Walk-ins Welcome, a fresh and funky bar by local tattoo artist, Sean Henry, signifies a very welcome addition to the somewhat watering-hole-challenged locale of Chirn Park. Oozing retro vibes inspired by his tattoo studio, the vibrant spot is stocked primarily with locally sourced craft beers and spirits, and a lively cocktail selection to boot. For fans of a punchy elixir, the Chilli Cherry Pow, made with Wildflower Gin, Luxardo Cherry Liqueur and Rose Lemonade, is a do not miss.

The chic, industrial style space offers a tapas-inspired menu, including munch-worthy morsels like Jamon & cheddar croquettes and Maple-infused pork belly with. Beyond their famed brews, Haven also offers crafted, classic cocktails like the Paloma and Southside. A sleek, grown-up.. dare we say, Haven – for both beer enthusiasts and cocktail lovers alike.
